This is a super simple, quick recipe for making pizza with everyday pantry staples.
Ok, this is not real pizzeria-style pizza. It is an improvised recipe from an old magazine for making pizza with stuff I already have on hand in the kitchen.
In these days of self-isolation and sheltering at home, making do with ingredients in the pantry can be challenging. Plus I wanted to make something fun.
This pizza uses a basic baking powder biscuit dough, shaped into one big disk, and cooked in a frying pan on the stovetop.
No yeast, no kneading, no rising time.
There is no yeast in the recipe because I don’t have yeast at home. Instead the recipe uses baking powder.
And I don’t have buttermilk for the biscuit dough, so I used milk and yogurt.
It makes a somewhat fluffy dough with a biscuit-like consistency.
With tomato sauce, cheese, and other toppings it kind of looks like a pizza. Just use your imagination a bit. It is yummy nonetheless.
Note: Swap out the tomato sauce and other savory toppings for something sweet, like bananas and chocolate sauce, to make this a dessert pizza.
Ingredients:
- 120 grams flour
- 1/2 tablespoon baking powder
- 1/4 tsp salt
- 80 milliliters milk
- 40 grams yogurt
- olive oil
Directions:
- Preheat a frying pan over medium heat.
- Put the flour, salt, and baking soda in a bowl and mix well with a spoon.
- Add the milk, yogurt, and olive oil (about 1/2 teaspoon) and mix with a spoon until the dry ingredients are all mixed in.
- When the frying pan is hot, add a little olive oil and gently swish it around to coat the bottom of the frying pan. (I used about 1.5 teaspoons of olive oil.)
- Reduce the heat to medium-low.
- Pour the batter in the frying pan. Be careful, it might splatter.
- Dip a spoon in water and use the back of the spoon to spread the dough into a circle (diameter about 18-20cm).
- Cook on medium-low heat for 3-4 minutes. The dough will start to puff up and the edges will start to look dry. Take a peak at the underside. It should be golden brown. If not, heat a little longer.
- Turn off the heat.
- Use a turner or spatula to flip over the dough.
- Spread some tomato sauce on top of the dough. Go easy on the sauce and toppings or they might slip off when removing the pizza from the pan.
- Add the toppings. I used cheese, sliced green onions, and anchovies, because that is what I had on hand. Be creative and use whatever toppings you like.
- Turn the heat back on. Use medium-low heat.
- Cover the frying pan and cook for about 5 minutes until the bottom is golden brown and the cheese on top has melted.
- Remove from pan and serve.
