Improvised fried rice

This is a recipe for a simple dish made from leftover rice and a few other things in the fridge and pantry.

The emphasis is on quick and easy and making do with whatever is on hand.

It is convenient when time is limited or during these difficult days when frequent trips to the grocery store or deli are not possible.

Sure, I could make traditional fried rice as usual, but sometimes I want something even easier.

And so…improvised fried rice. Yes, it is pseudo fried rice. It is leftover rice pretending to be fried rice.

That is, the rice is not fried. Frying would take more time and mean more dishes to wash.

So this is basically just reheated leftover rice mixed with scrambled eggs, some green onions, and some seasonings.

In a pinch, improvised fried rice served with a salad and some vegetables can be a quick and filling dinner.

Improvised Fried Rice
*Quantities depend on what you have on hand and how much you want to eat

Ingredients:

  • Leftover cooked rice
  • Eggs
  • Green onions
  • Furikake rice seasoning
  • Salt

Directions:

  1. Put the leftover cooked rice in a microwave-safe bowl and heat it in the microwave until it is hot.
  2. Meanwhile, make some scrambled eggs.
  3. After heating the rice, add the scrambled eggs and some minced green onions to the rice.
  4. Mix gently.
  5. Add some furikake rice seasoning or salt to taste.
  6. Mix gently.
  7. Sprinkle some dried parsley or ao-nori flakes on top to add some color.
  8. Serve
