A Japanese television program, among others, introduced a recipe for fried rice made with cup ramen (instant ramen noodles in a cup).(カップヌードル炒飯のレシピ)
I swapped out the regular cup ramen noodles for Nissin Thai tom yum cup ramen noodles. I also added extra Thai tom yum paste, nampla fish sauce, and fried minced garlic to kick up the spice and heat.
It is an easy, delicious, albeit junky and high-sodium, lunch. Probably best to have only occasionally and in limited quantity.
Cup Noodle Fried Rice
Ingredients:
- 1 cup instant ramen noodles, any flavor (I used tom yum flavor)
- 1 or 2 eggs
- Cooked rice (1-3 rice bowls)
- Sliced green onions
- Water
- Oil
Extra Seasonings:
- Tom yum paste
- Thai nampla fish sauce
- Fried minced garlic
Directions:
- Take the dried noodles out of the cup and put them in a bag. Use a rolling pin to break up the dried noodles in the bag. Don’t pulverise the dried noodles, just break them into little pieces.
- Put the dried noodles back in the cup, add the dried seasoning, and add water to just cover the noodles. Set aside.
- Slice the green onions and set aside.
- Crack the eggs into a small bowl and mix (as if preparing to make scambled eggs).
- If the cooked rice is cold, warm it up a little (in a microwave oven).
- Heat a frying pan over medium heat and add a little oil (so things do not stick).
- Add the eggs and green eggs and stir fry until the eggs are partially set.
- Add the warm rice to the frying pan.
- Add the cup noodles and soup to the frying pan.
- Stir fry for a few minutes until well mixed and everything is evenly heated.
- Sample a little of the fried rice and add extra tom yum paste, fish sauce, and fried garlic as you like.
- Mix well and serve.
